Burritos are ideal as the main food on the road. Why? You can eat it with one hand. Moreover, you can add many nutritious items inside and eat them all at once.
Eating-on-the-go can be dreary if you only have burgers bought from fast food places to look forward to. Do yourself a favor and grab a nutritious burrito in the morning.
Classic Burrito With EggsThe most conventional breakfast for a trucker includes scrambled eggs wrapped in bread. But this time, you can use the usual scrambled eggs as a filling for a flour tortilla. If you have leftovers lying around, you can add them to the eggs before you roll up everything in the tortilla.
Chili BurritoCreating a chili hotdog is easy even if you don’t have buns. Just use the same flour tortilla to house three regular sized hotdogs, squirt some cheese on them and add leftover chili.
The flour tortilla may seem tougher than white bread buns, but they can hold more hotdog for a hungry trucker.
Pasta or Rice BurritoOne of the best things that can be done with warm tortilla is to create a portable boat for spaghetti. Spaghetti, or preferably linguini, noodles can be placed inside along with a thick sauce for an instant carb-on-carb meal if
you’ve been feeling sluggish because of the lack of carbohydrates in your diet.
Another idea is to incorporate rice, which is the usual burrito style in many Asian countries. Fried rice, already made more flavorful with leftover peas and carrots, can take the place of one full meal in a diner. Wrap it in flour tortilla and you’re good to go.
Healthy Bean BurritosBeans are flavorful, especially when smothered in tomato sauce. Moreover, they can be a healthier alternative to rice because they contain more proteins than carbs.
Microwave a cup of pork and beans, or use the leftover beans inside your refrigerator, before pouring them in tortilla.
Vegetable and Fruit BurritoSmart truckers know that they need vegetables and fruits to avoid constipation. Regular bowel movement is essential when you have a schedule to keep and you can’t really stop to relieve yourself while on the road. Incorporating vegetables and fruits in your diet can become a challenge, but you can do it with a simple method. Make two burritos, one for meat and carbs, and another for vegetables and fruits. This is a burly version of a veggie wrap, and it packs a lot of nutrients.
